Potato & Cauliflower Curry

Primary Seven are currently learning about An Gorta Mór, The Great Hunger in Ireland from 1845 - 1851. The girls know and understand that the population of Ireland had an over dependence of the potato because it was easily grown and produced potatoes in abundance. This was a dependence that cost our nation dearly. 

As part of their studies, and to illustrate the versatility of potatoes in the twenty first century, the girls learnt how to make potato and cauliflower curry. Not only is this a tasty recipe, it is also a healthy, vegetarian alternative.

The girls were quick to roll up their sleeves and wash their hands in order to peel and chop potatoes and onions, prep the cauliflower, crush garlic cloves, peel and grate ginger, measure and cook spices (curry powder, turmeric and cumin) as well as adding in tinned tomatoes, a fresh green chilli and a sprinkle of coriander. 

When the curry was ready and dishes washed, the girls were delighted to taste their homemade curry with a piece of naan bread.
